"Would be more accurate if it quoted chicken or pig. These are monogastrics or single stomach animals closer to humans. Through industrial processing we break down grains so that the sugar and other nutrients become usable because we have broken the protecting grain/oilseed hull. Otherwise they would pass straight through in nature in a fertile medium of poop. Nature's way of plant distribution  and survival. Most grains etc are fed to fatten chicken and pigs, the so called healthy meats whereas red meat from ruminants is the healthiest, especially if grass fattened.  Grain fattened increases to inflammatory essential fatty acids Omega 6's to up to 20 to 1 out of balance.  Natural grass fat meats are roughly Omega 6:3 balanced less than 2 to 1 as per ancestral diets. This I suspect is the underlying or fundamental problem with modern plant, grain based, diets, not providing sufficient high quality anti-cancer, anti- inflammatory Omega 3's.  These comprise much of the fats in human brains and eyes and lack of them are believed responsible for many of ills of humans, not least dementia's."
